The flavour of in-season fruit is also at its peak, offering a taste that is bright, nuanced, and truly special. However, the downsides are seasonality, cost, and a shorter shelf life. The best choice really depends on your priority. If you value a firm texture and picture-perfect presentation, and berries are in season, go fresh. For an everyday breakfast, for budget-conscious meal prepping, or if you love the idea of a self-saucing parfait, frozen is an excellent and highly nutritious option. If using frozen berries, you can either let them thaw slightly to create that syrupy consistency or use them fully frozen for a colder, almost ice-cream-like texture in parts of your parfait. If you are concerned about excess water from frozen berries, you can let them thaw and drain them before layering.
A Simple & Adaptable Berry Parfait Recipe
This foundational recipe works beautifully with either fresh or frozen fruit. It can be assembled in minutes for a quick breakfast or snack. Ingredients: 1 cup of Greek yoghurt (plain or vanilla), 1 cup of mixed berries (fresh or frozen), 1/2 cup of granola, and optional honey or maple syrup to drizzle. For a single serving, start by spooning about a third of your yoghurt into the bottom of a glass or jar. Add a layer of berries, followed by a sprinkle of granola. Repeat the layers: another third of the yoghurt, more berries, more granola. Finish with the last of the yoghurt and top with a final scattering of berries, granola, and a drizzle of honey if desired. Serve immediately to ensure the granola stays crunchy.
Elevate Your Parfait
Once you have the basic formula down, the possibilities are endless. Consider adding a layer of toasted nuts like almonds or walnuts for extra crunch and healthy fats. Chia seeds or flax seeds can be sprinkled in for a boost of fibre and omega-3s.
