Your New Favourite Breakfast Hack
In the world of breakfast, efficiency and flavour are king. The idea of preparing one base that serves two different, equally delicious outcomes is a game-changer for busy mornings. This method starts with a nutrient-packed mix of buckwheat and traditional
rolled oats, soaked overnight with juicy peaches. On day one, you have a chilled, pudding-like breakfast waiting for you. On day two, with a couple of extra ingredients, that same mixture becomes the batter for wholesome, tender pancakes. It’s a simple strategy that minimizes prep time while maximizing your morning meal options, ensuring you get a satisfying start to your day without the repetitive cycle of the same old breakfast.
Why Peaches and Buckwheat?
This pairing is more than just a happy accident of flavours; it's a nutritional powerhouse. Buckwheat, despite its name, is not related to wheat and is a naturally gluten-free seed. It’s celebrated for its rich, nutty taste and impressive health benefits. Packed with high-quality protein, fiber, and essential minerals like magnesium and manganese, buckwheat helps keep you feeling full and energized. It also supports heart health and can help manage blood sugar levels. When paired with peaches, the combination is sublime. The natural sweetness and bright, juicy character of the peaches cut through the earthy notes of the buckwheat, creating a balanced and delightful taste. Peaches themselves are a great source of vitamins A and C, adding to the overall nutritional value of your meal.
Step 1: The Overnight Base
Crafting the foundation for both your overnight oats and pancakes is incredibly simple. The night before, you’ll combine your core ingredients. In a large bowl or jar, mix ½ cup of buckwheat groats and ½ cup of rolled oats. To this, add one cup of your preferred milk (dairy or plant-based work well) and one ripe peach, diced into small pieces. For a touch of sweetness and spice, stir in a tablespoon of maple syrup or honey and a ½ teaspoon of cinnamon. Mix everything thoroughly, ensuring the oats and buckwheat are fully submerged in the liquid. Cover the container and refrigerate overnight, or for at least eight hours. This soaking process softens the grains and groats, making them tender and easy to digest, creating a perfect base.
Step 2: From Soaked Oats to Pancake Batter
The next morning, your base is ready. If you're having overnight oats, simply grab a spoon and enjoy it chilled, perhaps with a dollop of yogurt. To make pancakes, take the soaked mixture and transfer it to a blender. Add one egg (or a flax egg for a vegan option), one teaspoon of baking powder, and a pinch of salt. The baking powder is crucial as it will provide the lift needed to create fluffy pancakes. Blend the mixture until it becomes a smooth, thick batter, similar in consistency to traditional pancake batter. If it feels too thick, you can add another splash of milk until you reach your desired texture. Let the batter rest for about five minutes before you start cooking.
Cooking and Serving Your Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or coconut oil. Once hot, pour about ¼ cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes per side, or until you see bubbles forming on the surface and the edges look dry. Flip carefully and cook the other side until it's golden brown. Because of the buckwheat, these pancakes will have a slightly darker color than those made with all-purpose flour. Stack the finished pancakes on a plate and get creative with your toppings. Extra sliced peaches, a drizzle of maple syrup, a spoonful of Greek yogurt, or a sprinkle of toasted nuts all work beautifully to complement the nutty, fruity flavour of the pancakes.
