Understanding the Global Acclaim
Before diving into the delicious details, it's worth knowing what TasteAtlas is. Far from being a niche food blog, it is a comprehensive online encyclopedia of global foods, ingredients, and culinary traditions. Its rankings are generated from the ratings
of a worldwide audience of diners and critics. The platform uses mechanisms to filter out biased or disingenuous votes, making its lists a reflection of genuine global sentiment. When an Indian dish ranks highly, it means food lovers across the world are taking notice and appreciating the unique flavours our country has to offer. In its latest lists, Indian cuisine itself was ranked 13th best in the entire world, a testament to its growing influence.
Our Breads Reign Supreme
Perhaps the most exciting news came from the bakery section, where Indian breads didn't just feature—they dominated. In a list of the world's best breads, India secured the top two positions. Butter Garlic Naan was crowned the number one bread in the world. This beloved, tandoor-baked flatbread, brushed with golden butter and flecked with aromatic garlic, was praised for its chewy texture and smoky flavour that perfectly complements rich curries. Right behind it at number two was the Amritsari Kulcha. This stuffed bread, a jewel of Punjabi cuisine, is traditionally filled with spiced potatoes and onions, cooked in a tandoor until crisp, and served with a generous dollop of butter. The list also featured the flaky, layered Parotta from South India, which secured a spot in the top five.
The Aromatic Heart of Our Kitchen
No Indian meal is complete without its complex blend of spices, and TasteAtlas has recognised this integral part of our cooking. In its ranking of the world’s best spice blends, Garam Masala was ranked third globally. This foundational mix, whose name translates to 'hot spices', is a fragrant combination of ground spices that varies from region to region and even family to family. It forms the flavour base of countless dishes, providing warmth, sweetness, and a touch of heat. The list also gave a nod to other popular seasonings like Chaat Masala, the tangy and savoury spice blend that gives street food its irresistible zing, and the aromatic Chettinad Masala from Tamil Nadu. Amchur, or dried mango powder, also received a mention for its unique sourness.
The Crown Jewel: Hyderabadi Biryani
The conversation around India's best dishes is never complete without mentioning biryani, and it has rightly claimed its place on the world stage. Hyderabadi Biryani was featured as one of the top 10 best rice dishes in the world. Renowned for its fragrant, long-grain basmati rice, tender marinated meat, and the luxurious aroma of saffron and fried onions, this dish is a masterpiece of the 'dum' cooking technique. In a separate ranking dedicated solely to different types of biryani, the Hyderabadi version was ranked as the best variety. This celebrated dish, with its roots in the royal kitchens of the Nizams, stands as a symbol of culinary excellence. Other regional variations, such as the subtly spiced Malabar Biryani from Kerala and the zesty Bombay Biryani, were also recognised, showcasing the incredible diversity within this single category.
