Milk adulteration is the practice of intentionally adding substances to increase volume, prolong shelf life, or fake thickness. While adding water is the most common method, which dilutes nutritional value, more dangerous chemicals are also frequently
used. Substances like detergent, urea, starch, and even preservatives like formalin are mixed into the supply chain. These aren't harmless tricks; they pose significant health risks. Detergents can cause severe gastrointestinal problems, while long-term consumption of urea can lead to kidney damage. Formalin, used to preserve milk for longer, is toxic and can harm the liver and kidneys. Studies have shown a high prevalence of adulteration, with one finding that over 68% of milk in India may not meet food safety standards, affecting both loose and packaged milk. This makes consumer awareness not just helpful, but essential.
Simple Home Tests to Uncover Adulterants
You don’t need a laboratory to perform basic purity checks. The Food Safety and Standards Authority of India (FSSAI) has validated several simple tests that can be done with common household items.
Test for Water: Put a drop of milk on a polished, slanting surface. Pure milk flows slowly, leaving a white trail. Milk diluted with water will run down immediately without leaving a mark.
Test for Detergent: Take 5-10 ml of milk, add an equal amount of water, and shake it vigorously in a closed bottle. If a dense, persistent lather forms, it indicates the presence of detergent. Pure milk will only form a thin layer of foam that quickly disappears.
Test for Starch: Boil 2-3 ml of milk and let it cool. Add a few drops of iodine solution, which is readily available at pharmacies. If the milk turns blue, it contains starch.
Test for Urea: This is a serious adulterant used to fake protein content. In a test tube, mix a teaspoon of milk with half a teaspoon of soybean or arhar (pigeon pea) powder and shake well. After five minutes, dip a red litmus paper into the mixture. If it turns blue, urea is present.
Recognising Synthetic Milk
Beyond adulterating real milk, some producers create 'synthetic milk'—a concoction of chemicals like caustic soda, urea, oil, and detergent designed to look like the real thing. This fake product has no nutritional value and is actively harmful. You can spot it by its distinct characteristics. Synthetic milk has a bitter aftertaste, feels soapy or slippery when you rub a drop between your fingers, and turns yellowish when heated. Real milk will feel slightly creamy and will not turn yellow upon simple heating.
Beyond Purity: Best Practices for Safe Storage
Ensuring milk safety doesn't end with checking for adulterants. Proper storage is crucial to prevent spoilage and bacterial growth. Unless you are using UHT (tetra pak) milk, it is vital to boil raw or pasteurised pouch milk as soon as you get it home to kill any existing bacteria. Once boiled and cooled, milk should be refrigerated immediately. Store it in a clean, covered container in the main part of the refrigerator, not in the door where temperatures fluctuate with frequent opening. Properly refrigerated boiled milk is typically safe to consume for two to three days. Also, be mindful of cross-contamination; keep milk away from strong-smelling foods like onions or garlic, as it can easily absorb odours.
