The Earthy Heart of Comfort Food
Beetroot has a distinct, earthy flavour that can be an acquired taste for some. Yet, when prepared with a little care, this root vegetable reveals a surprising depth and sweetness. Beyond its striking colour, beetroot is packed with nutrients. It's a good
source of fibre, folate, potassium, and magnesium. Studies suggest that compounds in beets, like nitrates and betalains, can support heart and brain health, and have antioxidant properties. This nutritional profile only adds to its appeal as a comforting and restorative ingredient, perfect for anyone looking to add a healthful boost to their meals. The key to unlocking its charm lies in how you cook it.
The Silky Embrace: Beetroot Soup
There are few things as comforting as a bowl of warm, vibrant soup, and beetroot soup is a standout. Blended until smooth, it has a velvety texture and a stunning, deep crimson hue. The flavour is a complex balance of earthy and sweet. This preparation is ideal for those who prefer a subtler introduction to beetroot, as simmering it with other vegetables and aromatics softens its more intense notes. Ingredients like onion, garlic, carrot, and potato often form the base, cooked until tender before being blended. A splash of vinegar or citrus juice added at the end can brighten the flavours and balance the sweetness.
Perfecting the Perfect Puree
Making a great beetroot soup is straightforward. The general method involves sautéing aromatics like onion and garlic, then adding chopped beetroot and other vegetables, such as carrots or potatoes, along with vegetable or chicken stock. The mixture is then simmered until the vegetables are fork-tender, which can take around 20 to 30 minutes. Once cooked, the soup is blended until completely smooth using an immersion blender or a countertop blender. For an extra creamy and luxurious finish, a swirl of cream, sour cream, or a plant-based alternative can be added before serving. This transforms it into a truly decadent and comforting meal.
The Caramelised Jewel: Roasted Beetroot
If soup is beetroot’s gentle side, roasting is where it becomes bold and concentrated. When cubed and exposed to the high, dry heat of an oven, beetroot undergoes a magical transformation. Its natural sugars caramelize, creating a deep, sweet, and slightly chewy exterior, while the inside remains tender. This method intensifies its flavour, making it a powerful ingredient. Roasted beetroot cubes are incredibly versatile. They can be served as a simple side dish, tossed into salads with goat cheese and walnuts, added to grain bowls for a pop of colour and flavour, or even served on toast with horseradish.
Mastering the Art of the Roast
Achieving perfectly roasted beetroot is simple. After trimming and peeling, the beets can be chopped into bite-sized cubes. Tossing them with olive oil, salt, and pepper is the classic approach. From there, you can add other seasonings like thyme or rosemary to complement their earthiness. They are typically roasted in a hot oven, around 180-200°C (350-400°F), for anywhere from 35 to 60 minutes, depending on the size of the cubes. The goal is to get them tender enough to be easily pierced with a fork and for the edges to be beautifully caramelized. This method brings out a robust sweetness that pairs wonderfully with tangy and salty flavours like feta, balsamic vinegar, or fresh orange.
