Urad dal is a cornerstone of Indian cooking, but it is easy to fall into a routine of dal, idli, or dosa. Here is how to transform this humble lentil into a show-stopping, crispy vada that adds exciting variety to your meals at home.
The Magic of a Perfect Vada
Known as Medu Vada,
Ulundu Vadai, or simply Urad Dal Vada, this savoury, doughnut-shaped fritter is a beloved staple across South India. With a delightfully crispy exterior that gives way to a soft, fluffy interior, it is a textural marvel. While commonly enjoyed as a breakfast item alongside idli and sambar or as an evening snack, the vada holds the potential to be so much more. Mastering this dish unlocks a new level of creativity with a familiar pantry ingredient, allowing you to move beyond the classic preparations and introduce exciting new dishes to your family's menu.
The Secret to a Fluffy Batter
The heart of a great vada is its batter. Achieving the right consistency is the most critical step and depends on a few key details. Start by soaking one cup of urad dal for at least four to six hours. Soaking softens the lentils, but overstoking can make the batter too watery, causing the vadas to absorb excess oil. After soaking, drain the dal completely. Grind it into a smooth, thick paste using a mixer grinder or a wet grinder, adding as little water as possible—just a few teaspoons at a time. If using a mixie, use ice cold water to prevent the batter from heating up. The final batter should be thick and airy. A classic test is to drop a small dollop into a bowl of water; if it floats, your batter is perfect.
