For the Vegetables: - 1 medium Beetroot, peeled and cut into thick sticks - 1 Carrot, cut into thick sticks - 1 Raw Banana (plantain), peeled and cut into thick sticks - 1 small Elephant Foot Yam (Suran/Chena), peeled and cubed - 1 Drumstick, cut into 2-inch pieces - 1/2 cup French Beans, trimmed - 1/2 tsp Turmeric Powder - Salt to taste For the Coconut Paste: - 1 cup grated Fresh Coconut - 3-4 Green Chillies (adjust to your spice level) - 1 tsp Cumin Seeds - 1/4 cup Water For the Final Mix: - 1/2 cup thick Curd (Yogurt), lightly whisked - 1 tbsp Virgin Coconut Oil - 1 sprig Curry Leaves
Step-by-Step Preparation
1. Cook the Hardy Vegetables: In a heavy-bottomed pan or an earthen pot (chatti), combine the yam, drumstick, and carrot. Add just enough water to partially cover them, along with the turmeric powder and a little salt. Cover and cook on a medium flame until they are about half-cooked. 2. Add the Softer Vegetables: Now, add the beetroot, raw banana, and French beans to the pot. If the water has evaporated, add a small splash more. Mix gently, cover, and continue to cook until all the vegetables are tender but still hold their shape. Be careful not to overcook them into a mush. 3. Prepare the Coconut Paste: While the vegetables are cooking, place the grated coconut, green chillies, and cumin seeds in a grinder. Add about 1/4 cup of water and grind to a coarse, thick paste. 4. Combine and Simmer: Add the ground coconut paste to the cooked vegetables. Stir gently to coat everything evenly. Let it simmer on low heat for about 3-4 minutes, allowing the raw flavour of the coconut to cook off. 5. The Finishing Touches: Turn off the heat. Add the whisked curd and mix it in gently. The residual heat will warm the curd without causing it to split. Finally, drizzle the fresh coconut oil over the top and scatter the curry leaves. Cover the pot and let the Avial rest for at least 10-15 minutes for the flavours to meld together perfectly before serving.
