For sabudana vadas, ensure the soaked tapioca pearls are well-drained. Squeezing out excess water helps the patties hold their shape. When using boiled potatoes, it's best to boil them in advance, let them cool, and even refrigerate them. Chilled, firm potatoes result in a crispier tikki. Before air frying, shape your patties and brush them lightly with ghee or oil on both sides. Preheat your air fryer to around 180°C to 200°C. Cook for 12-15 minutes, flipping them halfway through to ensure they cook evenly and turn golden and crisp on all sides.

French fries might seem off-limits during a fast, but Vrat-friendly versions made from potato or sweet potato are delicious in the air fryer. The process starts with cutting the potatoes into even ¼-inch sticks. Soaking the cut fries in cold water for about 30 minutes helps remove excess starch, which is a key step for achieving maximum crispiness. After soaking, it's vital to pat them completely dry with a paper towel. Toss the dry fries with a very small amount of oil and sendha namak (rock salt). You can also add a sprinkle of amaranth (rajgira) or buckwheat (kuttu) flour for an extra crunchy coating. Third, while air frying is a low-oil method, a little fat is necessary for browning and crisping.
