A Shocking Discovery in Ahmedabad
In a series of recent crackdowns, the Ahmedabad Municipal Corporation's (AMC) Food Safety Department raided multiple factories producing counterfeit tomato ketchup. At sites in Pirana, Gota, and Behrampura, officials seized thousands of kilograms of adulterated
sauce being manufactured in extremely unhygienic conditions. Instead of tomatoes, these factories were allegedly using a hazardous concoction of potato pulp, starch powder, acetic acid, and non-permissible chemical colours to create a product that only looked like ketchup. This fake sauce, packaged under names like 'Tasty Sauce' and 'Snack Touch Up', was being sold cheaply to street food vendors, posing a significant public health risk.
Why Homemade is a Healthier Choice
The Ahmedabad raids highlight a major concern with mass-produced condiments: a lack of transparency and control. When you make tomato sauce at home, you are in complete charge of the ingredients. You can ensure freshness, control the amount of sugar and salt, and completely avoid the artificial preservatives, colours, and fillers found in counterfeit and even some commercial products. Making your own sauce is not just about avoiding harmful chemicals; it's about creating a product that is more nutritious, tastes infinitely better, and gives you peace of mind about what your family is eating. It’s a simple switch that elevates everything from snacks to full meals.
A Simple Recipe for Pure Tomato Sauce
You don’t need to be a master chef to create a delicious and safe tomato sauce at home. This basic recipe requires just a few fresh ingredients and can be adapted with your favourite spices. The key is using ripe, flavourful tomatoes. Look for deep red, firm tomatoes like Roma or other vine-ripened varieties, as they have a meatier pulp and fewer seeds, making them ideal for sauces.
Ingredients You Will Need
• 1 kg ripe, red tomatoes • 1 medium onion, chopped • 2-3 cloves of garlic, minced • 1 tablespoon olive oil or vegetable oil • 1 teaspoon sugar (or to taste) • Salt to taste (start with ½ teaspoon) • ½ teaspoon black pepper, freshly ground • A pinch of red chilli powder (optional, for heat) • 1 tablespoon vinegar (as a natural preservative)
Step-by-Step Cooking Instructions
1. Prepare the Tomatoes: Wash the tomatoes thoroughly. Make a small 'X' with a knife on the bottom of each one. Blanch them by placing them in boiling water for about 60 seconds, or until the skin starts to peel back. Immediately transfer them to a bowl of cold water. The skins should now slip off easily. 2. Create the Base: In a heavy-bottomed pan or kadai, heat the oil over medium heat. Add the chopped onions and sauté until they become soft and translucent. Add the minced garlic and cook for another minute until fragrant. 3. Cook the Sauce: Roughly chop the peeled tomatoes and add them to the pan. Mix well and let them cook down, stirring occasionally. As they cook, break them apart with the back of your spoon. Let the mixture simmer for about 15-20 minutes until the tomatoes are completely soft and the sauce has started to thicken. 4. Blend and Finish: Turn off the heat and let the mixture cool slightly. Using an immersion blender, or by transferring the mixture to a regular blender, puree the sauce until it reaches your desired consistency—either smooth or slightly chunky. Return the sauce to the pan, add salt, sugar, pepper, and optional chilli powder. Stir in the vinegar, bring to a final simmer for 5 minutes, and then turn off the heat.
Storage and Variations
Allow your homemade tomato sauce to cool completely before storing. You can pour it into a sterilised glass jar and keep it in the refrigerator for up to two weeks. For a flavour twist, consider adding a pinch of garam masala for an Indian spice profile, or fresh herbs like basil and oregano for an Italian touch. For a sweeter, tangier ketchup-style sauce, you can increase the sugar and vinegar slightly. The beauty of this recipe is its versatility, allowing you to tailor it perfectly to your family's taste.
