Why Air-Frying Is a Healthier Choice
The shift to air-fried alternatives during Sawan, a time for spiritual and physical purification, makes perfect sense. Traditional vrat snacks like sabudana vadas and kuttu ke pakode are usually submerged in hot oil. An air fryer, however, circulates
hot air to achieve a similar crispy texture with a fraction of the oil—sometimes up to 80% less fat. This significantly reduces the overall calorie and fat content, making festive foods lighter on the stomach, which aligns with the sattvic principles of the Sawan diet. Reducing oil intake can help manage weight and lower the risk of high cholesterol. Furthermore, air frying can decrease the formation of potentially harmful compounds like acrylamide, which can be produced during high-temperature deep frying. It's a modern way to honour tradition without compromising on health or taste.
1. Air-Fried Sabudana Tikki
A quintessential fasting snack, the sabudana vada or tikki, gets a healthy makeover. To prepare, ensure your soaked sabudana is well-drained to prevent stickiness. Mix the soft sabudana with boiled and mashed potatoes, coarsely crushed roasted peanuts, finely chopped green chillies, and sendha namak (rock salt). Shape this mixture into small, flat patties. For that perfect crisp, you can brush them lightly with ghee. Preheat your air fryer to 180°C and place the tikkis in a single layer. Cook for about 12-15 minutes, flipping them halfway through to ensure they turn golden brown and crispy on both sides. They come out delightfully crunchy on the outside and soft on the inside, without the guilt of deep frying.
2. Crispy Kuttu Ke Pakode
Kuttu (buckwheat flour) is a staple during Sawan fasting. These pakoras are traditionally fried, but an air fryer makes them much lighter. Create a thick batter by mixing kuttu flour with sendha namak, black pepper, and green chillies, adding water gradually. You can fold in grated potato or paneer for extra texture and flavour. Drop spoonfuls of the batter into a preheated air fryer basket, ideally lined with parchment paper. Brush the tops with a little ghee and air fry at around 190°C for 12-14 minutes, flipping them once at the halfway mark until they are crisp and cooked through. This method gives you crunchy pakoras that satisfy cravings without feeling heavy.
3. Spiced Arbi (Taro Root) Fry
Arbi, or taro root, is another vegetable commonly consumed during vrat. For a simple and tasty side dish, first boil the arbi until it's just tender, then peel and slightly flatten each piece. Toss the boiled arbi with sendha namak, roasted cumin powder, and a pinch of black pepper. For a bit of heat, you can add chopped green chillies. Arrange the seasoned arbi in the air fryer basket in a single layer. Cook at 200°C for about 10-15 minutes, turning them over midway, until the edges are brown and delightfully crispy. This dish is incredibly simple to prepare and offers a wonderful texture.
4. Sweet Potato Wedges
Sweet potatoes are a fantastic source of energy and fibre, making them an excellent choice for fasting days. Creating healthy wedges in an air fryer is incredibly easy. Simply wash, peel, and cut sweet potatoes into even-sized wedges. In a bowl, toss them with a minimal amount of oil or ghee, and season with sendha namak and roasted cumin powder. Arrange the wedges in the air fryer basket, making sure not to overcrowd it. Air fry at 180°C for 15-20 minutes, shaking the basket or turning the wedges halfway through the cooking time. They become perfectly tender on the inside with a satisfyingly crisp exterior.
5. No-Oil Raw Banana Chips
Instead of reaching for packaged snacks, which are often avoided during Sawan, you can make your own crispy banana chips. Use raw bananas for this recipe. Peel them and slice them as thinly and evenly as possible using a mandoline or a knife. To remove extra starch, you can briefly soak the slices in chilled water. Pat them completely dry, as any moisture will prevent them from getting crispy. Toss the slices with sendha namak and black pepper powder. Place them in a single layer in your air fryer and cook at 160°C for 12-15 minutes, flipping them halfway through. Keep a close eye on them as thin slices can brown quickly.
6. Roasted Makhana (Fox Nuts)
Makhana is a popular, light, and nutritious fasting snack. While often roasted in a pan with ghee, the air fryer does an excellent job with less effort and fat. Simply place your plain makhana in the air fryer basket. You can add a tiny drizzle of ghee if you like, but it’s not strictly necessary. Air fry at 180°C for about 4-5 minutes, shaking the basket once or twice, until they are crunchy. Once done, transfer them to a bowl and immediately toss with sendha namak and a pinch of black pepper powder. This quick and easy snack is perfect for staving off hunger between meals.
