The secret to a great crispy pea snack starts, unsurprisingly, with the peas themselves. While you can use fresh peas if you have them on hand (they may need to be blanched first), most recipes agree that frozen peas work best. They are convenient, affordable,
and their texture holds up beautifully to the roasting process. Opt for standard garden peas over smaller petit pois, as their larger size gives them more substance once they crisp up. Beyond the peas, you'll only need a little bit of cooking oil—olive oil, coconut oil, or another neutral oil will work—and your favorite seasonings.
The Secret to Ultimate Crispiness
Here is the single most important step for achieving a truly crispy, crunchy texture: your peas must be as dry as possible before they go into the oven or air fryer. If they hold onto excess water, they will steam instead of roast, resulting in a chewy or even soggy texture. To dry them, first thaw the frozen peas by running them under warm water in a colander. Then, spread them out on a clean kitchen towel or layers of paper towels and gently pat them dry. For best results, let them air-dry for an additional 15 to 30 minutes to allow any remaining moisture to evaporate.
Method 1: Oven-Baked Perfection
The oven is a reliable way to get an even, golden crunch. Start by preheating your oven to around 190-200°C (375-400°F). Once your peas are completely dry, toss them in a bowl with a couple of teaspoons of oil and your chosen dry seasonings until they are evenly coated. Spread the seasoned peas in a single layer on a large, parchment-lined baking sheet, making sure not to overcrowd the pan. Roast for 30 to 45 minutes, shaking the pan every 10-15 minutes to ensure they cook evenly and don't burn. The peas are done when they are golden brown and slightly shrivelled. They will continue to crisp up as they cool down.
Method 2: The Air Fryer Shortcut
For a quicker late-night snack fix, the air fryer is your best friend. The process is similar, but much faster. Preheat your air fryer to around 200°C (400°F). Toss your dried peas with oil and seasonings as you would for the oven method. Place the peas in the air fryer basket in a single layer. You may need to work in batches depending on the size of your appliance. Cook for about 12 to 15 minutes, shaking the basket every 5 minutes to promote even crisping. They’ll cook faster than in a conventional oven, so keep a close eye on them during the last few minutes to prevent them from getting too dark.
Endless Flavour Combinations
While a simple mix of salt, pepper, and garlic powder is a delicious starting point, the flavour possibilities are nearly endless. For a classic Indian touch, try a sprinkle of chaat masala or garam masala. For a smoky flavour, smoked paprika and a pinch of cayenne are excellent choices. You can also experiment with onion powder, curry powder, chili-lime seasoning, or even a bit of nutritional yeast for a cheesy, savoury flavour. Serving and Storing Your Snack
Crispy green peas are at their absolute best when eaten fresh, shortly after they have cooled down. This is when their crunch is at its peak. Let them cool for at least 10 minutes on the baking sheet before diving in. If you do have leftovers, you can store them in an airtight container at room temperature for up to a few days, though they may lose some of their crispiness over time.
