The Concern: What's Really in Your Milk?
Milk adulteration is the practice of deliberately adding substances to increase volume, extend shelf life, or mimic the consistency of pure milk. This not only diminishes its nutritional value but can also pose serious health risks, especially for children.
Common adulterants include water, starch, detergent, and urea. While water dilution is the most frequent offence, robbing you of essential nutrients, chemical additives like detergents are more sinister. These are used to create a frothy appearance in diluted milk but can lead to gastrointestinal problems and other complications. Prolonged consumption of adulterated milk can contribute to long-term health issues, making vigilance a necessity.
DIY Detection: Simple Home Tests for Purity
You don't need a laboratory to perform basic purity checks. The Food Safety and Standards Authority of India (FSSAI) recommends several simple tests you can do in your kitchen. Test for Water: The simplest test involves a polished, slanting surface. Place a drop of milk on it. Pure milk will flow slowly or stay put, leaving a white trail. Milk diluted with water will flow immediately without leaving a mark. Test for Detergent: Take 5-10 ml of milk in a bottle or glass, add an equal amount of water, and shake it vigorously. If a thick, dense foam or lather forms that persists, it may indicate the presence of detergent. Pure milk will only form a thin layer of foam that disappears quickly. Test for Starch: Starch is often added to make diluted milk appear thicker. To test for it, boil 2-3 ml of milk, let it cool, and then add a couple of drops of iodine solution (tincture iodine, often available at pharmacies). If the milk turns blue, it confirms the presence of starch.
Trust Your Senses and Other Quick Checks
Beyond specific tests, your senses are a powerful tool. Synthetic milk, made from chemicals, can have a bitter or soapy aftertaste and may feel soapy when rubbed between your fingers. It can also turn yellowish when heated. Pure milk should have a slightly sweet taste and a pleasant aroma. Another common adulterant, urea, can be detected with a bit more effort. Mix half a teaspoon of soybean or arhar dal powder into about 5ml of milk and shake well. After five minutes, dip a strip of red litmus paper into the mixture. If it turns blue, it suggests the presence of urea.
Smart Storage: Keeping Your Milk Fresh and Safe
Proper storage is just as critical as checking for adulteration. The type of milk dictates how it should be stored. Pasteurised Milk (Pouch Milk): This is the most common type and requires constant refrigeration. Unopened, it generally lasts for a couple of days, but always check the best-before date. Once opened, it should be consumed within two to three days. It's best to boil the milk upon receiving it, cool it down, and then refrigerate it in a clean, covered container. UHT Milk (Tetra Pak): Ultra-High Temperature (UHT) processed milk is shelf-stable and can be stored at room temperature for several months as long as the package is unopened. However, once opened, it must be refrigerated and consumed within about three to seven days. There is no need to boil UHT milk before consumption. General Rule: Never leave any type of opened milk at room temperature for more than two hours, as bacteria can multiply rapidly. Store milk in the main body of the fridge, not the door, where the temperature is more stable.
