That bag of frozen peas sitting in the back of your freezer holds incredible potential. Far more than just a simple side dish for your matar paneer or a mix-in for pulao, these little green gems can be transformed into a snack that is both surprisingly
delicious and wonderfully crunchy. Unlike many fried snacks that are heavy and oily, roasted peas offer a lighter, healthier alternative packed with protein and fibre. It's the perfect guilt-free munchable for your evening chai, a late-night movie, or whenever you get a craving for something savoury and crispy.
The Most Crucial Step: Preparation
The secret to achieving that perfect crispiness lies in one critical step: removing moisture. If the peas are wet, they will steam instead of roasting, resulting in a soft, mushy texture. To begin, thaw your frozen peas. You can do this by running them under cool water in a colander for a minute or two. Once thawed, spread them on a clean kitchen towel or a layer of paper towels. Gently pat them dry, ensuring you remove as much surface water as possible. For best results, let them air-dry for another 15-20 minutes to make them extra dry before you begin cooking. This step is non-negotiable for a truly crunchy outcome.
Oven Method: The Roasting Route
Roasting in the oven is a classic method that yields fantastic results. Preheat your oven to a high temperature, around 200°C (400°F). Place your dry peas in a bowl and toss them with a teaspoon or two of oil—olive oil, coconut oil, or any neutral vegetable oil will work. Add a sprinkle of salt and pepper.
