Simple At-Home Purity Tests
While laboratory analysis is the only definitive way to confirm purity, the FSSAI recommends several simple tests you can perform at home to detect common adulterants. Test for Water: Place a drop of milk on a polished, slanting surface. Pure milk will flow slowly or stay put, leaving a white trail behind. Milk adulterated with water will flow immediately without leaving a mark. Test for Detergent: Take 5-10 ml of milk, add an equal amount of water, and shake the mixture vigorously. If a dense, thick lather forms, it may indicate the presence of detergent. Pure milk will only form a thin layer of foam that quickly disappears. Test for Starch: Boil 2-3 ml of milk and let it cool. Add a few drops of iodine solution (readily available at pharmacies). If the milk turns blue, it has been adulterated with starch. Test for Synthetic Milk: Synthetic milk often tastes bitter or soapy. When you rub a little between your fingers, it will feel soapy. Upon heating, it may turn yellowish.

It is crucial to remember that these home tests are preliminary screening tools and not a substitute for comprehensive lab testing. They can help you spot gross adulteration but may not detect low levels of contamination or the presence of more sophisticated adulterants like antibiotics or pesticides. Therefore, the most critical step in ensuring milk safety is purchasing from trusted sources. Always opt for packaged milk from reputable brands that display an FSSAI license number. Check for intact seals and 'best before' dates. This, combined with your own sensory checks for odd smells or textures, forms a strong first line of defence.
Best Practices for Safe Milk Storage
Even pure milk can become unsafe if stored improperly. Bacteria multiply rapidly at warmer temperatures, leading to spoilage and potential illness. To keep your milk fresh and safe, follow these essential storage rules: Temperature is Key: Refrigerate milk as soon as you get home. The ideal refrigerator temperature is between 0°C and 4°C. Store it in the Back: Do not store milk in the refrigerator door. The temperature there fluctuates every time the door is opened. Place it on a shelf at the back of the fridge, which is the coldest and most stable location. Keep it Sealed: Always keep the milk container tightly closed to prevent it from absorbing odours from other foods and to protect it from airborne bacteria. It's best to keep it in its original, light-blocking container to protect vitamins. Follow the 'First In, First Out' Rule: Use older milk before opening a new container.
