The most effective way to portion your chutney is by using a standard ice cube tray. This method is incredibly simple and requires no special equipment. Start by preparing your favourite green chutney recipe. Once blended, simply pour the chutney into the compartments of an ice cube tray. For best results, cover the tray with a lid or plastic wrap to prevent freezer burn and odour absorption. Place the tray in the freezer until the chutney is frozen solid, which usually takes a few hours.
Long-Term Storage Success
Once your chutney cubes are completely frozen, you can transfer them from the ice cube tray into a more space-efficient container. Pop the frozen cubes out and place them in a zip-top freezer bag or an airtight container. Squeeze as much air as possible out of the bag before sealing it to further protect against freezer burn. Be sure to label the bag with the date. Stored this way, your green chutney can maintain its quality for up to three or four months. Some sources even suggest it can last for up to six months.
Keeping the Colour Vibrant
One of the biggest challenges with green chutney is preventing it from turning brown or black. This discoloration is a natural process called oxidation, which happens when the herbs are exposed to air. A key trick is to add an acidic ingredient like lemon or lime juice during the blending process. The acid helps to preserve that bright green colour. Some cooks also suggest adding a few ice cubes while blending; the cold temperature slows down the heat generated by the blender's blades, which can also contribute to colour loss.
How to Thaw and Use
When you're ready to enjoy your chutney, the process is effortless. Simply remove the number of cubes you need from the freezer. You can let them thaw in a small bowl on the kitchen counter at room temperature or in the refrigerator. If you're in a hurry, a few seconds in the microwave will also do the trick. Once thawed, give the chutney a quick stir to recombine everything, as some separation can occur. It will be ready to serve with your favourite snacks and meals, tasting just as fresh as the day you made it.
