The Perfect Roast for Caramelised Goodness
Roasting is arguably the best way to bring out the deep, natural sweetness of a sweet potato. The high, dry heat of the oven caramelises its sugars, resulting in a tender, fluffy interior and delightfully crispy edges. It’s a simple method that transforms
the vegetable into a versatile side dish or a hearty addition to salads and bowls. For perfect results, the key is not to overcrowd the pan. Each piece needs space to roast, not steam. Cut your sweet potatoes into uniform ½ to 1-inch cubes. Toss them with a bit of oil and your choice of seasonings. While salt and pepper are excellent, consider Indian spices like turmeric, cumin, or a pinch of garam masala. Spread them in a single layer on a baking sheet and roast at a high temperature, around 220°C (425°F), for 25-35 minutes, flipping them halfway through. They are ready when they are tender enough to be pierced with a fork and have golden-brown, crispy edges.
The Ultimate Mash for Creamy Comfort
Mashed sweet potato is the ultimate comfort food, but the wrong technique can lead to a watery, stringy texture. The secret to a luxuriously creamy mash is to avoid boiling the potatoes in water, which adds excess moisture. Instead, you can bake or steam them whole until tender. Another brilliant method involves cooking the peeled and cubed potatoes directly in a pot over low heat with butter and a splash of cream or milk. The potatoes release their own liquid and cook in the flavourful fats, creating a rich base. Once the pieces are fall-apart tender, you can mash them directly in the pot. For a savoury take, add minced garlic, fresh herbs like rosemary, or a pinch of chilli flakes. For a sweeter version, a touch of cinnamon, nutmeg, and a small drizzle of maple syrup can elevate the dish. A food processor will yield a super-smooth puree, while a simple potato masher will give you a more rustic, textured finish.
Crispy Fries Without the Guilt
Who can resist a plate of crispy fries? Sweet potato fries offer a healthier, nutrient-packed alternative to their potato counterparts, and you don't need a deep fryer to get them perfectly crisp. Your oven or air fryer can do the job beautifully. Cut the peeled sweet potatoes into uniform ¼-inch sticks. For extra crispiness, some experts recommend soaking the cut fries in cold water for 30 minutes to draw out excess starch. After soaking, it is crucial to pat them completely dry. Toss the dry fries with a light coating of oil and a dusting of cornstarch, which helps create a crunchy exterior. Arrange them in a single layer in your air fryer basket or on a baking sheet, making sure they don't overlap. Air fry at around 200°C (390-400°F) for 15-20 minutes, shaking the basket halfway through. In an oven, bake at a similar high temperature for about 25-30 minutes, flipping once. Serve them immediately with a sprinkle of salt and your favourite dipping sauce.
