The FSSAI's Hygiene Rating Scheme is a voluntary initiative designed to help you make informed choices. It provides a transparent scoring process for food service establishments like restaurants, hotels, cafes, bakeries, and sweet shops. Based on an audit of their compliance with food safety and hygiene standards, businesses are given a rating that they can display. The primary goal is to encourage establishments to improve their hygiene practices, which in turn helps reduce food-borne illnesses and builds consumer trust. This system creates a clear benchmark, allowing customers to prioritise not just taste, but also safety.
How to Check a Restaurant's Rating
Checking a restaurant's hygiene rating is relatively straightforward. The most direct way is to look for the hygiene rating certificate, often depicted with smileys, prominently displayed at the establishment's entrance or dining area. For those who prefer to check before heading out, the official FSSAI ecosystem provides digital tools. You can use the FoSCoS (Food Safety Compliance System) portal to search for a Food Business Operator (FBO) by name or by its 14-digit FSSAI license number. Additionally, FSSAI has supported a 'Hygiene Rating' mobile app, which allows users to look up ratings on the go. Many consumers are now pushing for these ratings to be mandatorily displayed on food delivery apps as well.
Decoding the Smileys: What the Ratings Mean
The rating system is designed to be simple and easy to understand, using a scale of one to five smileys. A rating is generated after a third-party audit agency, empanelled by FSSAI, assesses the establishment against a detailed checklist covering everything from food handling and storage to premise cleanliness and personal hygiene of staff. A score of five smileys indicates excellent compliance with hygiene and safety standards, while one smiley signifies poor compliance. A rating of three or more is generally considered good. Any establishment failing to comply with critical, asterisk-marked items on the checklist may not be issued a rating at all.
Voluntary, Not Mandatory: A Key Limitation
A crucial point for consumers to understand is that the Hygiene Rating Scheme is currently voluntary. This means restaurants are not legally required to participate. As a result, adoption has been low in many areas. For example, reports from June 2026 showed that in a major culinary hub like Hyderabad, less than 2% of licensed eateries had obtained a rating. This lack of mandatory participation means that while a good rating is a positive signal, the absence of a rating doesn't necessarily mean a restaurant is unhygienic—it simply means it hasn't opted into the scheme. This is why many consumer groups and even some officials are calling for the rating to be made mandatory to improve overall food safety standards.
