Today’s diners are increasingly mindful of how food affects their well-being,” says Chef Anuj Mathur, Executive Chef at Taj Surajkund Resort & Spa, Delhi-NCR. The focus is on wholesome bowls that combine proteins, grains, and superfoods with seasonal produce. “It’s comfort reimagined for a generation that values both flavour and mindful eating,” he adds.

Chef Gagandeep Singh Sawhney, Executive Chef at Shangri-La Eros New Delhi, sees mood food as part of a larger wellness philosophy. He highlights how mindful eating has moved from trend to table, shaping the way modern kitchens approach comfort food. At the heart of this philosophy are unprocessed ingredients, lean proteins, and whole grains, which are cooked with minimal intervention to retain their natural goodness. “The idea is to let ingredients speak for themselves – fresh, balanced, and nourishing without being heavy,” he says.
Japanese-inspired meals such as poke bowls and sashimi platters have become the new mood food, offering light, nutrient-dense comfort.
