Rajasthan health officials found cooking oil with alarmingly high contamination levels at a McDonald’s outlet in Jaipur in a surprise inspection. According to a report by The Times of India, officials examined the oil used for frying French fries and other menu items and found it to be in poor condition during the inspection at the Gaurav Tower outlet by the state’s food safety team.
During the checks, the frying oil was described as “extremely black and unusable.” Despite this, it was allegedly being heated to around 150 degrees Celsius and used throughout the day. Officials destroyed approximately 40 litres of the oil on-site and directed the outlet to replace it immediately with fresh stock.

Authorities reported that the oil used for non-vegetarian items showed Total Polar Compound (TPC) levels of 28%, while the oil used for vegetarian preparations recorded 31%. Under food safety norms, TPC levels above 25% are considered unsafe.
Dr Manish Mittal, Chief Medical Health Officer (Jaipur-II), told TOI that once oil crosses this threshold, it can begin generating carcinogenic compounds and elevated trans fats, which are associated with an increased risk of heart disease.
In addition to the oil violation, officials found around 40 kilograms of rotten tomatoes stored in plastic crates inside the outlet’s cold room. The spoiled produce was destroyed on the spot.

The outlet’s manager was present during the inspection and was instructed to take immediate corrective measures, including replacing the degraded oil. An improvement notice under the Food Safety and Standards Act, 2006, is expected to be issued. Further action will depend on the detailed laboratory analysis of the samples collected during the inspection.
Responding to the development, a spokesperson for McDonald’s told NDTV that the company acknowledges the routine inspection and is fully cooperating with authorities.
“We follow rigorous McDonald’s global standards and remain strictly compliant with the guidelines prescribed by FSSAI and food regulatory authorities,” the spokesperson said. The company added that food safety and quality are fundamental to its operations and that it remains committed to upholding regulatory standards and customer trust.
