Originally a family holiday home of the Binani family, brought to life by Shradha Binani (daughter of businessman Braj Binani), the property has been lovingly transformed into a twelve-suite seaside boutique resort. The name itself, drawn from the amaranth flower, said in Greek mythology to never wither, is a fitting metaphor. After a few days here, you’ll understand: the memory of your stay won’t fade either.

I checked in for two nights and three days, and within the first hour, it was clear this wasn’t going to be a regular resort experience. Every detail, from the layout of the property to the way you’re looked after, is designed to make you feel indulgent, unrushed, and just a little spoiled. Luxury here is quiet, understated, and deeply personal.
What immediately stands out is the service. The butlers at Amaranth aren’t just efficient, they’re genuinely attentive. Call once, and someone appears almost instantly. Always polite. Always smiling. Always ready to help without ever making you feel like you’re asking for too much.
They talk to you, guide you, help plan your day, and will even walk you to the beach if needed. There’s no rush, no complaint, no hesitation. Every interaction feels thoughtfully personalised, almost as if the staff has been assigned solely to your care.
Rooms That Transport You To A Different World
When I first set foot in this luxurious villa, my butler escorted me to my signature ground-floor suite. Opening the brown wooden door, I was greeted by a private, landscaped courtyard, perfect for a morning coffee or late-night conversations. Sliding the doors open led me into a spacious bedroom with neutral tones, a huge bed, and subtle art touches.
And then there was the bathtub. Set outdoors, open to the sky, framed with lush greenery, and resting on natural stone, it instantly made the room feel like a slice of paradise. The room was combined with thoughtful touches like fresh fruits, banana and jackfruit chips, cashews, coffee, and hot water. It was clear that the staff anticipated your every need.
Housekeeping is another standout: the rooms are cleaned twice a day, once when you step out and again before you return. You never come back to a messy space. You come back to calm, spotless perfection. There’s no judgment, no intrusion, just a serene, safe sanctuary to return to.
Every Corner Feels Frame-Worthy
Even with just twelve suites, the property feels vast. Villas stretch along one side, the swimming pool occupies a central position, and beyond it lie gardens, lawns, and art-filled corners featuring works by Subodh Kerkar and Bhisaji Gadekar. Every picturesque corner encourages you to pause, breathe, and take in your surroundings.

Near the lake, a softly lit setup creates a magical space perfect for romantic evenings. When the lights come on, it feels like you’ve been transported. And if you want the beach, it’s a short walk away; a butler will gladly accompany you, no fuss, no hurry.
The architecture itself is a celebration of Goan character. Designed by George Seemon, the structures use laterite stone for grounded authenticity, with bamboo and wicker adding warmth and texture. Earthy tones, open spaces, and thoughtful design make the heat of summer feel manageable and even pleasant.

Culinary Delights
Helmed by culinary curator Ritu Dalmia, the resort’s food is a revelation. The menu balances Goan favourites, pan-Indian classics, and international flair. You have a variety to choose from.
Still, for me, the Goan fish thali was the loudest. Goan fish curry, rawa fried prawns, chicken cafreal, dal, tendli masala, red rice, poie, sol kadi, pickles, and papad – it’s everything you dream of when thinking of coastal Goa. Breakfasts, whether served in-room or at the Amaraanth Kitchen, are equally impressive, be it wood-fired sourdough, spinach and feta quiches, fruit and fromage tartlets, a selection of cheese, ros omlete, upma, dosa, pancakes, parathas, and Goan choriz.
I loved seeing the farms and producers listed on the menu, a thoughtful nod to sourcing transparency.

Foraging And Cocktail Magic
One unforgettable experience was the foraging-led cocktail session with Pankaj Balachandran, co-founder of Countertop. The morning started with a trip to a nearby farm, where we picked figs and explored edible leaves and fruits. For city dwellers like us, it was grounding, a reminder of nature’s slow rhythm and rich abundance.
Back at the resort, Pankaj transformed our harvest into cocktails that were as imaginative as they were delicious. Each drink had a story, a flavour profile, and a connection to the ingredients we’d picked ourselves. The session was both interactive and educational, making each sip feel like part of the day’s adventure.
The resort’s bar, The Lab, is a collaboration with Countertop India and focuses on regional ingredients and sustainable practices.
The HVN Bathing Ritual: Ultimate Relaxation
The crown jewel of the stay was the HVN wellness experience, debuting in India at Amaraanth. London’s conscious wellbeing landmark brings its Hydro Bed, a 38°C heated water mattress, which cradles the body for massages, scrubs, and wraps. For those who dislike oily massages, this is a dream: no mess, just pure relaxation and rejuvenation.

Outdoor bathing rituals can also be arranged, either at the spa or in the suite’s open-sky bathtub. My bath, prepared with sea salt and accompanied by green tea, became a meditation. For a few moments, there was only calm; the stress of city life washed away entirely.

Amaraanth isn’t about ticking off tourist boxes. It’s about staying in. Slowing down. Letting luxury meet serenity. Manicured lawns, carefully curated artwork, and thoughtfully designed suites all carry Shradha Binani’s personal touch.
Whether visiting as a couple, alone, or simply needing a reset, Amaraanth leaves you feeling richer, calmer, and quietly changed.
For two nights and three days, I felt like a calmer, more indulgent version of myself. And in the world of travel, that is the ultimate luxury.
