New research indicates a significant association between the consumption of ultra-processed foods (UPFs) and an increased risk of depression. A large prospective cohort study, based on data from 171,818 UK Biobank participants, found that specific ingredients
commonly found in UPFs—namely flavors, coloring agents, and sweeteners—are particularly linked to the onset of depression. The study, which followed participants for an average of 10.7 years, recorded 5,424 new cases of depression. While the overall proportion of UPFs in a diet showed a U-shaped relationship with depression risk, with the lowest risk at about 16% of total food consumption, the risk increased significantly beyond that threshold. For instance, a diet comprising 30% UPFs was associated with a 16% higher risk, 40% with a 32% higher risk, and 50% with a 41% higher risk compared to the lowest estimated risk range. The study specifically highlighted that participants whose diets included 40% flavorings had a 46% higher relative risk of depression, 20% coloring agents led to a 49% higher risk, and 20% sweeteners resulted in a 45% higher risk.
