Amilla Maldives has announced the appointment of Sean Derrick Walles as the new Executive Chef. With nearly two decades of culinary experience, Chef Derrick is set to bring his expertise in creative menu
innovation and sustainable sourcing to the resort's kitchens. Known for his award-winning culinary skills, he has previously held leadership roles at luxury resorts across the globe, including in Portugal, Indonesia, and the Maldives. Chef Derrick's new role will involve overseeing the resort's seven dining venues, which offer a variety of dietary lifestyle menus, and managing the resort's organic gardens and initiatives like Homegrown@Amilla and Homemade@Amilla. His signature dishes include a range of innovative creations such as Peruvian style fish ceviche and watermelon sashimi.
