A scoping review has highlighted the growing integration of culinary medicine into medical education across the U.S. and Canada. This approach aims to address the inadequacies in nutrition training for medical students and residents. The review, which
analyzed 100 publications from 70 institutions, found that culinary medicine experiences are being offered in various formats, including electives and extracurricular activities. These programs often focus on the Mediterranean diet and plant-based nutrition, aiming to improve medical trainees' knowledge, skills, and confidence in dietary counseling. Despite challenges such as time constraints and funding, the programs have shown positive impacts on participants' attitudes and behaviors towards nutrition.
