The InterContinental Sydney Coogee Beach is set to open a new dining experience featuring Rick Stein's restaurant, which will offer a Mediterranean beach vibe. The restaurant will seat 224 guests across various spaces, including an open courtyard and
a balcony. The hotel, managed by Salter Brothers Hospitality, also features 22 ocean-facing suites and a leisure deck with an infinity pool, bar, and spa, set to open in March 2026. The new venue is part of Salter Brothers' expansion, which includes acquiring several properties and launching the Ardour Hotel and Resorts brand.
