What is a Gujiya?

Gujiya is a deep-fried Indian pastry stuffed with sweetened khoya (mawa), dry fruits, desiccated coconut, cardamom, and sometimes semolina. Its half-moon shape and flaky texture make it a classic festive sweet cherished across India.

Gujiya recipe with Suji

For the Dough

2 cups all-purpose flour (maida)
4 tbsp ghee
A pinch of salt
Water (as needed)

For the Suji Stuffing

1 cup semolina (suji/rava)
½ cup desiccated coconut
¾ cup powdered sugar
3 tbsp ghee
2 tbsp chopped almonds
2 tbsp chopped cashews
1 tbsp raisins
½ tsp cardamom powder
Optional: 1 tbsp melon seeds or chopped pistachios

For Frying

How to make:

In a wide bowl, add mixed flour, salt, and ghee. Rub together in ghee to make coarse dough.
Add water gradually to form a neat dough.
Cover with a cloth for 30 minutes.
Heat a pan and add suji, roast on a medium flame and let it cool.
Once cooled, add desiccated coconut, sugar, chopped nuts, raisins, and cardamom powder.
Divide the dough into small balls, and roll them into a thin disc.
Place 2 tsp of suji filling in the centre and fold into a half-moon by dampening the edges.
Heat the ghee in a pan on medium heat.
Fry gujiyas in batches until golden and crispy.
If you want a sugary and glossy finish, dip a warm one-string sugar syrup.
Sprinkle pistachios and enjoy.
